Janos has spent a lifetime using local indigenous ingredients and is deeply committed to Native Seeds/SEARCH, whose mission is to conserve, distribute, and document the adapted and diverse varieties of agricultural seeds, their wild relatives and the role these seeds play in cultures of the American Southwest and Northwest Mexico. Always ahead of the curve, wherever Janos has set up shop over the years, he has managed to find a local farm fresh resource to supply him with locally grown, impeccably fresh ingredients.
